Dipped Apple Slice Pancakes

This is so cool. I dipped apple slices like the ones seen above (cut out the core in the center) in pancake batter and fried them up!

My pancake batter went as follows:
1cp flour
1 1/2 tsp baking powder
1TBS splenda
ground cinnamon to taste-
I used a lot, probably 1 TBS at least.

Blend these ingredients with a whisk then add 3/4 cp milk.

Pay no attention to the mess..

Melt butter/margerine/ spray in flat bottomed frying pan/skillet and dip the apple slices so they are covered on both sides.

I used a fork to scoop them up out of the batter onto the pan.

When you see bubbles in the batter, it's time to flip them and cook the other side.

Instead of syrup, I spread apple butter over the tops of them and it was soooo good!

DIY Shrug upcycle from a turtle neck

Here's a real easy fashion upcycle with little to no sewing.

Let's turn this old turtle neck shirt (with an ugly stain- but you can't see it in the pic) into a lovely shrug.

Start by cutting off the bottom of the shirt.
I just eyeballed it but you could determine how long you want it and measure and all that..
It looks like I cut about 5 or 6 inches down from the armpit.

Grab your handy seam ripper and take out all the stitches holding the collar to the shirt.
I love taking out stitches as long as they aren't ones that I put in!

Next, cut a curve down each side like shown in the picture. You can draw it out on the fabric with pencil, if that makes it easier.
I decided to hem the neckline so I folded it down 1/4 inch and sewed straight across.
The rest has not been hemmed as yet and I wore it over the weekend. It feels like t-shirt material so it hasn't frayed around the edges.
Practically No-Sew!

Tada!
I'm thinking I might add ruffles to the rounded edges. What do you think?

4 Ingredient Strawberry Cake Mix Cookies for Easter

So excited because my package arrived yesterday! I ordered my first ever liquid eyeliner and I bought it for  1CENT!! Someone had listed it for sale on Copious.com and I used some of my free credits that I get for signing up to buy it. Check out my post from last week to get your credits through my referral link :) Plus, I get $5 when you buy something! I like free money!

But anyways, enough about that! Today, I have a super easy, delicious Strawberry Cookie recipe to share with you all!

You need:
1 box Strawberry cake mix
1/2cp coconut (optional)
2 eggs
1/2 cp canola oil (can use vegetable but canola oil is supposed to be healthier)
That's it! Just 4 ingredients!!

Preheat the oven to 350 F.
Combine eggs and canola oil in one bowl
and
Combine cake mix and coconut in another.
Then, stir the wet stuff into the dry stuff until all combined.
Drop by rounded teaspoonfuls onto a no-stick sprayed cookie sheet and bake at 350F for 8-10 minutes until the bottoms brown a little.
The flavor reminds me of Captain Crunch cereal with the crunchberries! mmmmm..

Happy Easter, everyone!

Beaver Lake and Spring pics

I went to see the Maple Syrup tour and these are some containers that the Indians would use to make & store maple syrup!

Beaver Lake.

Every once in awhile, a fish would jump up out of the water but never when my camera was ready!

Everyone else is super creeped out by these trees but I thought they were pretty cool. See the eyes?

It's like the forest was watching..

Yucky swamp pic BUT look at the orb!!!
I got an orb in one of my pics!!

Winding, Floating path through the marshlands. It was so surreal.

Mr Turtle wanted to say hello

The fuzzy vine winding up the tree is apparently Poison Ivy! Yikes!! Good thing I didn't touch it! lol.
If you see this, stay away.

I love how close we were able to get to the deer!

Sweet little bambi- oh that movie makes me cry..

On a brighter note, the trees are flowering already up here in NY!!

I just love cherry blossoms and daffodils!!

So beautiful.
It's always such a treat when Spring arrives after a dark gray winter.

I also caught this white squirrel in mid flight!

This tree bark is so neat- like a color by number!

Well, those are some of my latest adventures. Where do you like to go to see nature's beauty in Spring time?
