Gooey s'more cookies

So pretty and delicious! I used an old chocolate drop cookie recipe and added some toppings to make this ooey and gooey.

the Special dark chocolate chips are my favorite for baking and snacking..

After mixing up the cookies, I put some chocolate chips on top and cut the marshmallows in half (or thirds) like shown below.

Then put the marshmallow half on top of the chocolate chips like so:
ok, ok, I've teased you long enough. Here's the recipe:

Combine 1/2cp soft BUTTER, 1/2cp BROWN SUGAR, and 1/4cp WHITE SUGAR in a large bowl.

Beat 1 EGG and 1 tsp VANILLA EXTRACT together then add to butter mixture.

Combine 1cp FLOUR, 1/4cp UNSWEET COCOA, and 1/2 tsp BAKING POWDER in a separate bowl then stir into butter mixture.
Preheat oven to 350F.

Drop onto cookie sheet by rounded Tablespoons. 
Bake for 5 min.

Put chocolate chips on the tops of the cookies. Then cut the marshmallows as shown above, and place them on top.

Bake 5 min. more and you have gooey chocolate insides to devour with milk. mmmm..

Cranberry White Chocolate Pumpkin Spice Cookies

Oh boy! Sound like too many good things all in one place? Only one way to find out! This recipe is what I'm thankful for this year ;)

Here's the recipe:
2 cp flour
1 1/4tsp baking powder
1tsp baking soda
1tsp cinnamon
1/4tsp nutmeg
1/4tsp ground ginger
1/8tsp ground cloves
2 eggs
1 1/4cp brown sugar (I cut mine with a no calorie sugar substitute by 1/2)
1/2cp oil
1tsp vanilla extract
1cp pumpkin
1cp dried cranberries
1cp white chocolate chips

Preheat oven to 350F

 Whisk dry ingredients (flour-cloves) and set aside.
Combine eggs and sugar until well blended. Add oil, vanilla, and pumpkin.
Stir in dry mixture a little at a time.
Add cranberries and chocolate.
Drop cookies onto cookie sheet and bake 8 min.

They are like cloud cookies so light and fluffy. Bet you can't eat just one!

ROLO COOKIES!!

SO YUMMY!! and easy too!
 All you need is: 1 box devils food cake mix, 2 eggs, 1/3 cp oil, bag of Rolos

Mix the cake mix, eggs, and oil in a large bowl.
Form balls of dough around each Rolo.
Bake on cookie sheet coated in no stick spray at 35oF for 7-8 minutes.
That's it!

MMMM!
This picture brings back happy memories..these cookies are all gone now!
