So Summer officially began the other day and we needed an appropriate pancake breakfast. Who's up for some strawberry lemonade pancakes?
Ingredients: see above ;)
2cp flour
4tsp baking powder
handful of uncooked whole oats (for fiber)
1cp lemonade drink mix
1/2cp-1cp of chopped strawberries
2 eggs
3tsp vanilla extract
1&3/4 cp milk
Get the griddle fired up to 350degrees (or heat up the frying pan). Mix the dry ingredients in mixing bowl then add in all the rest and stir until all combined.
Pour that lemony goodness out (about 1/4 cp per pancake or whatever looks good) and wait for some bubbles before flipping to cook the other side.
These were so good we didn't put syrup on them. You could make an icing with milk and confectioners sugar or use a cream cheese topping, though.. Just a thought!

Incredible Stuffed Blueberry French Toast

| ok, so here's what your french toast should look like. I made four slices. Mike forgot to stop and get cream cheese so I had to send him out for it while I was making the toast... |
| ...and he came back with these! and cream cheese. |
| So now we just need to make the filling. Wash your blueberries! Warm up the cream cheese (half a block/4oz) in the microwave. 30 seconds was perfect for mine. |
| Stir in about 1/4cp confectioner's sugar (more or less depending how sweet you want it) and cinnamon to taste. |
| Put a bunch of berries on one slice of french toast. |
| Then spread the cream cheese mixture on the other slice and put them together. mmmmm! |
| oh! I almost forgot, I sprinkled more of the sugar on top |
| We took our dads to a car show on the lake for Father's Day where we saw this contraption! |
| It's a Ranger pickup with among other things, a fish tank in the trunk!! There are real freakin fish in there!!!! What?!?!?! |
| and a dragonfly landed on my arm and hung out there while I walked! Good luck for me, I hope! |

A Love-ly Breakfast
| This is a romantic twist on an old stand by. You remember the classic egg inside the bread thing, right? Well, this time the hole is heart shaped <3 |
| In case you've never done this before, all you do is: cut out a hole in the middle of a slice of bread, melt butter in a frying pan, place bread in pan, crack egg into hole and fry it up! |
| I even fry the holes! MMMM, fried bread is so yummy! You can also sprinkle salt and pepper over the egg so it gets cooked in. |

The Pancake Experiment: Blueberry Pie Pancakes!!
| The Pancake Experiment continues with blueberry pie pancakes! (This post could also be called "Ice cream for Breakfast") |
| Step 1: Wash off them berries!! I don't want you getting sick from making something I posted- that would make me feel really bad.. |
| Step3: Spray pan with no stick spray and allow pan to heat up before pouring batter onto it. |
| When you see bubbles form in the batter, it's time to flip them over. |
| oh MY god, they look so good! |
| They actually exploded in blueberry-ness when I cut into them with my fork! |
| Ice Cream goes best with blueberry pie so.. Mike said these just might be his favorite of all the pancakes I've made him so far! |
| Here he is helping me with dinner. So sweet. While I was making breakfast, he quietly got out the veggies we needed chopped up for dinner and cut them all up. I hardly had anything left to do when he got done! |
| The biscuits were so good & we were on a blueberry and ice cream kick so we made blueberry cobbler sundaes complete with cinnamon on top. |

Banana Bread Pancakes?!?!
Yes, you heard me right BANANA BREAD Pancakes!! They are so good. I made them for my boyfriend this weekend and he loved them.

We didn't bother with making the glaze, though. Butter melted over the top and homemade whipped cream did the trick for us. MmmmMMmmmm. Even just with the melted butter on top, they were amazing.
