Keep 'Em Flying! Comemorating a Local Hero

Today's post is a little different than my usual. I came across this pin that was given to me a few months ago and wanted to share the story behind it with you.

The pin came from a hangar in Geneseo where they are undertaking an incredible project, the rebuilding (from the ground up) of a P-51B Mustang plane in honor of a fallen local Tuskegee Airman.

Here is an excerpt from the project's Facebook page:

On April 21st, 1945, the city of Rochester lost a war hero. Flight Officer Leland H. Pennington, a member of the Tuskegee Airmen's 301st Fighter Squadron, was lost while returning to base from combat. A successful bomber escort mission over the Attnang-Puchheim Marshalling Yard in Austria was Leland's last action for the war effort. During this mission, Pennington was flying a P-51B-10 "Mustang" named "Lucy Gal," after his wife.

Incredible Stuffed Blueberry French Toast

You won't believe how easy it is to make this fancy breakfast piece!
First, make french toast.
Most of you know how to do that already but for the beginners:
Beat 2 eggs with a dash of cinnamon until it looks like the picture above.

Dip bread slices (2 eggs is just enough for 4 slices) in the egg mixture. Be sure the egg covers both sides.

Then, coat a frying pan with spray and cook both sides of the bread (until they don't look soggy anymore).

We went to Virginia for a weekend and the man insisted on buying it for me to keep at his place- as long as I ALWAYS put it away in the far back corner of the cupboard! lol.

ok, so here's what your french toast should look like. I made four slices.

Mike forgot to stop and get cream cheese so I had to send him out for it while I was making the toast...

...and he came back with these! and cream cheese.

So now we just need to make the filling.

Wash your blueberries!
Warm up the cream cheese (half a block/4oz) in the microwave. 30 seconds was perfect for mine.

Stir in about 1/4cp confectioner's sugar (more or less depending how sweet you want it) and cinnamon to taste.

Put a bunch of berries on one slice of french toast.

Then spread the cream cheese mixture on the other slice and put them together. mmmmm!

oh! I almost forgot, I sprinkled more of the sugar on top

We took our dads to a car show on the lake for Father's Day where we saw this contraption!

It's a Ranger pickup with among other things, a fish tank in the trunk!!
There are real freakin fish in there!!!!
What?!?!?!

and a dragonfly landed on my arm and hung out there while I walked! Good luck for me, I hope!

Weekend Jaunt to Williamsburg and Surprise Car Show!

On our trip to historic Williamsburg, we stumbled on a car show! Dad was happy for sure!

This Packard was my personal Favorite of all the cars there (and there were lots).

and right next to my favorite was this beauty.

Shiny, red Ferrari!

This lady was playing a teeny tiny violin in the colonial area.
It was a lively tune she played!

Stunning view of the pond behind the Governor's Palace.

No colonial experience would be complete without the stocks. Somebody's been naughty!

Even the drive was an adventure when we passed Dale Jr.! Haha, come on pokey, keep up!

Grasshopper Pie!

Cool, easy, no bake dessert.
Sounds good on a hot summer day!
If you like mint, then I dedicate this post to you.

Round up:
2cp whipping cream
2TBS confectioners sugar
2cp milk
1&1/2 tsp peppermint extract
5 drops green food coloring
2 (3 1/2 oz) pkgs vanilla instant pudding
1 cp mini chocolate chips
1 9-inch oreo pie crust

Beat the cream and sugar to soft peaks.

In a separate bowl, mix the milk, mint, and food coloring.
Add pudding. Fold in cream and chocolate chips until all blended.

Pour into the oreo shell and refrigerate at least 3 hours.

Done! Bing Bang Boom!

The Making of a Parade



Last weekend I helped organize a parade in smalltown USA. How many people get to say they've done that?!?

We even were able to watch it go by!

...and see a Who! Oh my goodness,

This was probably my favorite float- live music ( yes,I wanted to dance) They were really fun.

after a hard days work..

We've been slowly introducing our cats to each other. Slowly because the black one is a bit territorial but here they are sitting quietly (look how close they are!)for a few moments enjoying nature.
